Spray a large casserole pan with some low calorie cooking spray. Add the onions and cook on a moderate heat until they start to soften.

Add the beef and cook until all sides are browned.

Stir in all the remaining ingredients, bring to the boil, then remove from the stove. Cover with a lid.
Step 5
Place in the oven and cook for 2.5 to 3 hours. The meat should be tender and the potatoes should have started to thicken the stew.
Step 6
Pick out the bay leaf.

You'll need to cook this Beef Stew for around 3 hours or until cooked through and the beef is tender.
